About Colombia Reforest
The Reforest Project is a hands-on approach to countering the effects of climate change on coffee farming, promoting sustainability through tree-planting and building community resilience.
Forest Coffee's Reforest Project has the objective of planting 50,000 native trees throughout the northern Tolima and South of Caldas regions in Colombia. Starting with an initial 200 trees on the farms of 30 local coffee producers near El Vergel Estate, our farm located in Fresno, Tolima, they're working to revitalize coffee landscapes and foster a healthier ecosystem. Through reforestation and sustainable farming practices, they're building resilience to climate change while empowering coffee growers to adapt to evolving environmental conditions. This initiative offers a hopeful vision for the future of coffee in Colombia.
The process begins with the meticulous selection of ripe Caturra, Colombia & Castillo cherries, which are first subjected to a 24-hour anaerobic pre-fermentation. This stage promotes even ripening and enhances the coffee’s sweetness.
Following this, coffee is de-pulped at El Vergel washing station to remove the cascara to then be washed mechanically to start drying phase using mechanical silos for four days. This method ensures a consistent moisture level while preserving the coffee’s bright acidity and rich sweetness. To lock in its optimal flavour, the beans are then stabilized for 30 days, allowing the flavours to mature and harmonize.
This coffee is part of our Exceptional range, which are roasted in small batches on the Aillio Bullet coffee roaster.
The beans then make their way over to our roastery in Northumberland, where we roast them to-order in small batches to ensure optimum freshness and flavour by the time it makes it into your mug.
