To make our milk chocolate we use Madagascan Grand cru de Sambirano cocoa butter. (the brown cocoa beans are not used in white chocolate, just the cocoa butter)
Madagascar grows only 0.1% of the world’s cocoa production. The unique flavour comes from the special environment of soil, flora and climate. It is grown in the rainforests of the Sambirano river valley, and is derived from Criollo-Trinitario, Trinitario and Forastero cacao. After harvesting it is fermented and dried. The cocoa butter is extracted by compressing cocoa beans under very high pressure.
