This Gerdo Idido Yirgacheffee is a fully washed coffee from Ethiopia that is produced by groups of smallholders and delivered to the Adorsi washing station. The name Gerdo is a mixture of Gedeo (the zone) and Idido (the village) where Adorsi is located.
Farming methods in the Yirgacheffe region remain largely traditional. Farmers typically intercrop their plants with other food crops, to not only maximize land use but also to provide food for their families. In addition to this most farms are also organic-by-default as they typically use very few-if any- fertilisers or pesticides.
We roast this coffee to produce a medium roast profile which results in tasting notes of french toast, peach, white chocolate and creamy Madagascan vanilla.
Most of the farm work is done by family members who will selectively handpick the ripe cherries and deliver it to the Adorsi washing station. They will then be hand sorted to remove any under/overripe or damaged cherry. The cherry is then pulped and fermented for 36 to 48 hours in the stations fermenting tanks. After fermentation, parchment is washed in clean water and transferred to raised drying beds where they will dry for approximately 7 to 11 days.

Brewing Method: We find this coffee is very versatile and tastes fantastic when brewed with a number of different coffee makers, but our favourite way to enjoy this coffee was with an espresso machine, aero press or a pour-over. Happy brewing!
